My guess is (I haven't tried it yet) you have to form an army with the banner icon in the bottom right. Which in turn may require you having a kingdom or being a vassal to one.
Nearly every mod i played (bigger overhaul mods) added Mercenary Camps where you were able to hire dozens of Mercenaries of your liking for a higher price. I mean imagine you could hire an entire AI Army filled with Mercenaries, and each month you have to bid with other Lords to win them over. That would truly be a dynamic system.
